Chicken Alfredo


Ingredients

2 cups alfredo sauce (see recipe)
1 can mushrooms
2 chicken breasts, cooked
2 cups noodles (your choice)


Directions

1. Combine first three ingredients in a saucepan and bring to a boil.
2. To Freeze: Place in freezer container. Put uncooked noodles in a freezer bag and place all together.
3. To Reheat: Place frozen sauce mixture in a saucepan and cover ¼ with water. Simmer until heated through.
4. Cook noodles as directed and serve with sauce.




Makes 2 servings

Alfredo Sauce

Ingredients

1 ½ cup White Sauce (see recipe)
1 clove garlic, minced
1 ½ cup parmesan cheese, grated
1 tsp parsley

Directions

1. In a medium saucepan, heat white sauce, then add garlic and cheese and whisk quickly until combined. Stir in parsley and serve.



Makes: about 2 cups

White Sauce for Freezer Cooking

Ingredients

¼ cup cornstarch
2 tsp salt
½ tsp white pepper
4 cups milk
¼ cup butter or margarine

Directions

1. In a medium sauce pan, combine cornstarch, salt and pepper; using whisk, stir in milk until smooth.
2. Add butter. Stirring constantly, bring to a boil over medium-high heat and boil for one minute. Remove from heat.
3. When thickened, use in recipe.



Makes about 2 cups.

Spaghetti Sauce


Ingredients

1 lb ground beef
2 cups marinara sauce
1/2 green pepper, chopped
1 stalk celery, chopped
1/2 cup carrots, grated
1 can mushrooms
1 tbsp italian seasoning
4 servings spaghetti noodles

Directions

1. In a medium pan, brown ground beef. Drain fat.
2. Add rest of ingredients(except noodles), and simmer over medium heat until celery is cooked (about an hour). You could also put this in the slow cooker and simmer on low for 6 hours.
3. Cook noodles according to package directions.
4. Serve sauce on noodles, if desired sprinkle with parmesan cheese.
5. This recipe freezes well, to reheat, just place frozen sauce in pot (or slow cooker) and add 1/4 cup water and simmer until heated through.

Makes 4 servings.

Marinara Sauce for Freezer Cooking

Ingredients


1 (475mL) can of Tomatoes, diced or crushed
1/3 cup olive oil
6 garlic cloves, minced
3 medium onions, chopped
4 carrots, grated
3 Tbsp Italian seasoning mix (see previous recipe)




Directions


1. Heat oil in a large pot over medium heat. Cook garlic, onions and carrots, stirring occasionally, until soft. Stir in tomatoes and juice, and seasoning mix. Bring to a boil.
2. Reduce heat and simmer rapidly, uncovered stirring occasionally, until sauce is reduced by half.


Makes about 4 cups.

Taco Seasoning Mix


Ingredients

½ tsp Paprika
¼ tsp Chili Powder
¼ tsp dried Oregano
¼ tsp Garlic Powder
¼ tsp Onion Powder
¼ tsp crushed Red Pepper Flakes
1 ½ tsp Cumin
1 tsp Sea Salt
1 tsp Black Pepper


Directions

Mix together and store in an airtight container.

Italian Seasoning Mix


Ingredients

2 tsp dried Basil
2 tsp dried Marjoram
2 tsp dried Oregano
1 tsp dried Sage


Directions

Mix together and store in an airtight container.
